A New Culinary Chapter
for the Rio Grande Valley

ZAYA  was born from the need to elevate how Indian and Persian cuisines are experienced in the Rio Grande Valley.
Often simplified or misunderstood, these culinary traditions carry centuries of depth, ritual, and refinement.

ZAYA reintroduces them through a modern fine-dining lens — authentic, sophisticated, and approachable.
Designed as a destination restaurant by Altura Concepts, ZAYA reflects a commitment to cultural storytelling, elevated hospitality, and memorable dining experiences across South Texas.

This is not fusion for novelty. This is heritage, respectfully reimagined.

Cuisine & Chef

Where India Meets Persian

Chef Mahesh Dhami — Executive Chef

ZAYA’s menu blends two ancient culinary worlds — Indian cuisine complemented by refined Persian influences.

Led by Michelin-experienced Chef Mahesh Dhami, the kitchen brings together classical Indian training, Persian inspiration, and modern fine-dining technique. His background includes the Taj Group of Hotels in India and six years at Musaafer by The Spice Route Co., contributing to back-to-back Michelin Stars in 2024 and 2025.

His cuisine is soulful, layered, and intentional — honoring heritage while elevating each dish for a contemporary dining experience in the Rio Grande Valley.

A signature highlight to experience throughout the year:
The Seasonal Biryani program, celebrating India’s most iconic dish through rotating regional expressions.
